It's Awesome to be Rawsome!

Mark Twain wrote: “To eat is human, to digest divine.”  

These festive times & celebrations play havoc with my body.

Recently, I and my other two co-workers who have similar secondary health problems agreed: that after these particular holidays it is really hard to get up in the morning, you feel groggy all the time, energy levels are low, muscles are sore, and you feel more vulnerable to illnesses. Not to mention the obvious fact that we have gained some extra kilos. Considering all the tantalizing, more than tempting dishes offered ,tasted and thoroughly enjoyed over the Christmas and New Year it isn’t necessary to be Sherlock Holmes to deduce who is the culprit  for these widening waistlines and their repercussions. For me, the only and most radical way to tackle the problem is the pursuit of Rawsome! 

As you know, I have passion for cooking and like to try different kinds of herbs. Even with my growing love affair with all things culinary would not make me jump head first into a 100% diet of raw food.. What I simply try to do is to incorporate more raw foods into my diet (Maybe 50-70 %). As my healthy friends’ testimonials and the researchers found out, raw food or enzyme rich food can help us many ways, and I’m glad to announce following my previous post, these can help us stay young and more energetic. One of my friends who had a minor psychological problem cured herself by eating vegetarian and uncooked food. Therefore, put aside WTF recipes for a month or so, and enjoy these more wholesome goodies I am about to share with you and shout out loud “how awesome to be rawsome”  

What is rawsome?

Rawsome means never heat any foods to above 42 degrees Celsius. Basically this means eat uncooked food, such as salads, fruits, seeds and nuts or uncooked meat (Except, at least for me, Sashimi, I still cannot eat uncooked meat) fit in this category. We are constantly warned to avoid “processed food”. Unfortunately, if we shop in supermarkets, we find many products claiming they are “Natural” products like 100% Apple juice. However, when you take a closer look at the package, the word pasteurized is plainly in view. This means the natural ingredients have been destroyed in the process of pasteurization. Cooking (heating) is also a manmade processing. Therefore, consuming these different processed foods, we are missing out on the goodness of old-fashioned fresh fruits, vegetables, nuts and seeds which are considerably more beneficial and ideal food for us humans.  

For example, when I was making an apple & cinnamon mixture for my apple tarts, I had to boil the fresh crispy apple to squashy and mushy apple mixture. What happened with the fresh color after heating? The cooked apple’s color was lost! It looked dull and when I tasted it, the taste like rotten apple, I was thinking ‘um’ now the apple is completely dead, it is time to put honey and cinnamon to disguised the smell of dead body” I had to add spice and sugar to enhance the flavor so it wouldn’t be too offensive to our dear tender taste buds. When we cook food, not only the original color, texture and flavors are altered, worse still, almost all of the nutritional value is lost as well.  

Why we can maximize health with Rawsome?  

1. Essential nutrients are very vulnerable to the effects of the heat:

Essential nutrition’s, such as fatty acids which are essential for a healthy nervous system and cell walls, enzymes (I will explain more later), high temperature also destabilize their protein molecular structures, leading to deficiency of some essential amino acids. Antioxidants which are renowned for helping fight against cancer and decreasing the aging process are also destroyed. Therefore raw food is extremely rich in many beneficial nutrients and it ensures you get all the health benefits and bliss nature intended!  

 2. Detoxification, a process to clean waste from within our bodies

We all know that raw food or fresh juice is a means of reducing waste. It is because cooked foods not only take longer to digest but will also ferment within our body. Especially free radicals will be produced when the fat and protein are heated. Cooked foods quickly ferment and putrefy in the intestinal tract while raw foods are almost systematically absorbed before they are oxidized.  

3. Help to lose weight

Fresh fruit and vegetables are nutritionally dense foods, so eating more of them means that the body progressively requires less food? Why? As you absorb nutrient rich raw food, the body steadily gets healthier which means your metabolic efficiency increases naturally in turn. Of course, moderation and balancing are important; quality proteins (I prefer planted based protein such as soya) are all vital for weight loss and maintain good lean muscle too.  

4. It is better for your emotional stability

Researchers have stated that “live” food eaters tend to feel better and are often happier. They are less subject to stress and nervous tension than conventional eaters suffer from. At least for me, raw food is definitely a guilt free food as it is lower in calories and has less fat content. A real testimonial is the one of my girlfriend who suffered from minor psychological problems; she had visited some famous psychologists in Hong Kong and was prescribed medication. When her friend (who is an owner of a popular organic vegetarian café in Soho) suggested she stop taking pills, do Yoga and eat vegetarian food. she decided to take his advice and within 3 months, she could go without pills and ended her sessions with psychologists once they had confirmed her improvement . So I believe that food and the mind have very direct connections.  

Best of all, raw food eaters become healthier and happier! As I mentioned, consuming a rawfood diet has been proven scientifically to improve our health significantly, increase energy levels, boost immune system and improve digestive function, clearing skin to name but a few benefits! 

 

What are Enzymes?

The first time I met the renowned Hong Kong cinematographer, Henry Chung, I noticed he looked 20 years younger than his actual age. He didn’t hesitate to say that “Our body needs enzymes and amino acid.” 

So, what are Enzymes?

According to Dr. Howell, who was the first researcher to recognize the importance of the enzymes has written a great metaphor” Think of it this way: Enzymes are the "labor force" that build your body just like construction workers are the labor force that build your house. You may have all the necessary building materials and lumber, but to build a house you need workers, which represent the vital life element.

Similarly, you may have all the nutrients -- vitamins, proteins, minerals, etc., for your body, but you still need the enzymes -- the life element -- to keep the body alive and well.

He goes on to explain “It's just as if you inherited a certain amount of money. If the movement is all one way -- all spending and no income -- you will run out of money” Dr. Howell  

No matter how many vitamins, minerals and other nutrients we’ve digested, without enzymes, no chemical activity would take place in our body. We need enzymes to digest food, for assimilating the nutrients. 

So…Where do the enzymes come from?

Yes, we have capacity to produce enzymes, saliva, gastric juices, pancreatic juice and intestinal juice can produce enzymes but the amount is limited and exhausted quite quickly. If we just solely reply our body to supply of enzyme activity, as mentioned by Dr.Howell, “we will run out of money” so our body doesn’t function well. Therefore, in order to get a sufficient supply of enzymes to run the brain, heart, and other organs and tissues, we need “Digestive enzymes”, which means digesting the raw food. Raw foods and living foods have lots of enzymes to aid digestion. Sadly, I have been eating an “enzyme-free diet” for many years. To go back to a previous point I made; once we cook food, it does not carry enzymes anymore, and the body is forced to use up its own stock of digestive enzymes. The worse scenario is, if we overuse our metabolic enzymes, disassociation may result and this has been noted as to have a direct link to cancer, coronary heart disease and other serious diseases.

 

4 Tips to incorporate rawsome into your diet:

1. At least one salad a day

As well as all the cooking, I love chopping vegetables, I feel it is a meditative process when I am handling such colorful veggie. I like putting red and yellow bell peppers in my salad. The bright vibrant colors of fresh veggie mean that it is packed with antioxidants! I have no difficulty choosing to eat salad for lunch or dinner. Whenever I eat out, I will almost systematically order a bowl of salad.  

2. Take out your blender and make fresh juices

As mentioned in the preceding paragraph, I avoid juices that are pasteurized and prefer going through my fridge or fruit basket, choosing fruits that are on their way out and popping them all into my blender and savor a healthy juice. Another thing I have recently stopped doing is putting milk into my coffee as the milk is no longer truly fresh after being pasteurized. Out of curiosity you could “google” milk and its effects; you will find lots of evidence to possibly convert you as well. Choose Yogurt instead, it is cooled down and natural bacterial culture is added! Carrot juice is one my favorites, and I use blended cucumber with protein shakes.  

3. Enjoy a powerful fruit breakfast

Yes, I am a brunch girl! I like a powerful breakfast…according to the principle of food combining, the ideal practice is to have fruit meal for breakfast. I have gotten into the habit of eating 3-4 Kiwi in the morning (better eat one fruit at one time), it’s a radical cure to keep you regular. If you don’t feel fulfilled just eating fruit for breakfast you could at least try to have fruit with empty stomach.  

4. Prioritize your shopping route, shop for vegetables and fruits first!

Thanks to supermarket shelving strategies, the entrance is packed with colorful and vivid vegetables and fruits to provide pleasure for customers’ eyes. True, why not get into the habit of stopping by to pick up your favorite fruits and vegetables for salad and enjoy it on a movie night? Choose nuts and seeds instead of popcorn. My fridge is packed with fresh fruits and vegetables to ensure I will eat something healthy at home.

A Little End of Year Rambling

2 Days ago, I was in a hair salon; I picked up a Cosmopolitan magazine 2007 issue.I read an interview with the top Brazilian model Gisele Bundchen. In the interview, she said she was going through her mid 20s crisis.

Wow, this term instantly hit a nerve. “A mid 20’s Crisis??" who’d have dreamt of it!

Middle-age crisis are quite well-known but no one ever told me that there was such a thing as "A mid 20s crisis". Myself included, most of my friends are in their mid 20s. So I asked my girlfriends "hey, have you ever heard of a mid 20s crisis?"

One of my girlfriends said "Yes, I know what that means. Once women arrive at the age of 25, they have a lower metabolism and tend to get fat easily. What's more, they begin to lose collagen too... which means our skin is less supple!"

Yeah, we are living in the world where we are constantly bombardment by adverts and are warned about the dreaded “getting ugly after 25…” syndrome. The media have a knack of keeping us on our toes everyday and let us know that we can indeed do something to avert if we use such and such skin products, or subscribe to a slimming & body spa to stay youthful. All seem to say that if we don’t, we will turn into ugly sour milk. Thanks for the “ugly truth” message issued for free from the beauty industry. Still, I guess this is still a very minor syndrome for girls in their mid 20’s.

Next day, when I was having brunch with one of my best friends, she simply answered "Mid 20s crisis? Sure! Mine’s due to paying back the enormous school loan, thinking and worrying about my uncertain career."

I think "uncertainty" is one of the best words to describe the mid 20s crisis syndrome. If you think about it, most people graduate from University at the age of 22 and by the time they are 25 have working experience of just 2-3 years which is categorizes them as being in the infant stage of their careers, a difficult place to be for most of us. I often hear my 20 something friends talking about having changed their jobs or companies and their reasons for doing so

Whatever how uncertain or lives are, our 20’s are a significant period for everybody. But I believe "crisis" is not really appropriate to describe every person in his or her mid 20’s. When I was looking at Gisele’s’ beautiful face, her perfect figure and thinking about her successful modeling career , I found myself wondering and asked her this question, "do you really view your current situation as a crisis?" Maybe it is a true crisis for her, only she knows. I don’t want to judge or criticize what others think with only limited facts. 

From my perspective, I consider the mid 20s to be a golden age. Compared to my Mom who spent her 20s in the mayhem of a Cultural Revolution, I am so grateful that I have energy, passion and freedom in my life. I am so grateful for what life has offered me so far.  

2010 will be a good year and it is a definitely a golden year for me. Good or evil is all depends what we see. Yes, I am a born optimist. I have a strong feeling that it will be an as exciting year as 2009 and even better. I usually don’t look back to the past, but I can’t deny that 2009 has been an awesome year, in terms of my work, relationships with friends and family, personal development etc. Life has gotten seriously more fulfilling and satisfying than previous years. 

Making New Year resolutions are not my thing as I know myself well enough at this stage, but on the other hand, I’m resolute to remember that everyday is a fresh page. I don’t need to plan a serious and nostalgic review on New Years Eve and am not against the idea of making a New Year Resolution as I realize that it is still important for me and most people be reflective at this time of year.  

So...as a possible summary to the long list of New Year Resolutions, here are two words to remember - FOCUS and PASSION. Perhaps these two words are a probable antidote to a mid 20s crisis. At least they are a little less doom and gloom and will help to keep ourselves lucid enough to know that there are plenty of alternative ways to keep us happy and in good health and have supple skin all the same. 

Focus is so important. I like to consider myself as a person who is curious about many aspects of life and have a healthy craving to try new things. Moderate curiosity is good. It gives me the confidence to try out new recipes, attend different kinds of cultural events, get involved in different kinds of sports, and meet different kind of people. True, the variety can enrich my life in many respects. For hobbies, I am not against the idea to experiment with things you are curious about. Each time I see the slogan from the Discovery Channel “The world is awesome!” a little voice inside says to me “don’t die yet” and the thought gives me a wonderfully warm feeling. Life has so much to offer and it can be so much fun which is all the more reason to remember that life is still short and we only have limited time and energy. We need to know the importance of prioritizing.  

This is true in particular for my job as I really need to focus hard on it. In art and photography worlds, successful and experienced artistes, marketing persons, curators seem to have these 2 qualities in common “dedication and perseverance” with regards to their work and lives. You notice the difference between being good at something and being GREAT at it. We rightfully call them experienced and successful. So it’s back to resolutions again and another of mine (even though I did say I wasn’t going to) I want to make good use of my focus and energy and make sure they aren’t spread too sporadically. So, whenever I’m working or start to learn something new, I will bear the word “FOCUS!” close to my heart. 

I know the word focus sounds disciplined, right? But if we consider that if we focus on something with Passion, focus will be a more enjoyable process. I am glad arts and public relations are something I like. When I graduated from University, I didn’t know what to do with my political science and history degree. I spent time traveling and experiencing many different things and little by little my preference to what I really wanted to do took shape and more defined. If you don’t know what you like at this moment, listen to yourself. I know everyone has an answer within his or her own minds.  

Passion can ignite enthusiasm and motivation; it can make us focus more easily and visa versa, focus can be a catalyst to help us make full use of our passion. Sometimes, my energy and enthusiasm wear out easily, especially if I try to do too many different things as the same time. So to conclude, passion and focus are indispensable and yet again more words to keep in mind over the coming year. 

Lastly, before ending this short post, I want to give thanks to my teachers/mentor in 2009! They made my 2009 wonderful with tons of inspiration.

Happy Holidays!May your Stomach fill with Christmas Desserts!

So So So So So! It’s holiday season again! Christmas is a great opportunity to get together with family and friends to celebrate this wonderful moment.

I am not hosting this year, but have been invited as a guest to several parties so will need to think about things to bring and offer to my hosts. Since a jar of Pesto sauce wouldn’t be the most suitable item to bring to a Christmas dinner party, thank goodness there are plenty of bakeries in Hong Kong who sell great freshly made Christmas desserts. Here are a few suggestions from other regions of the globe you mightn’t know of, and which never fail to impress friends and families! 

1.Panettone

Panettone is traditional Italian Christmas bread. It has a very cute cylindrical or dome shape! Panettone is now becoming more & more popular in Hong Kong and you can find it in most supermarkets. The texture is light and spongy which makes it different from the usual slightly more traditionally dense British or American ones. I did a little online investigating beforehand and found out that Panettone has a wonderfully romantic story behind it. In the 15th century, a man fell in love with a poor baker’s daughter. The girls’ name was Tonio, and the man was afraid that his wealthy family would never allow him to marry a poor girl. So the man created this recipe for Tonio. Panettone became instantly popular and the girl became very wealthy too. And as with all fairly tales, this one too had happy ending, and thanks to the success of Pannetone, they were able to get married. Italians are always so romantic, even when it comes to food!  

 

2. Mince Pie

Wanna try something British? Mince pies are wonderful to share with people and instantly conjure up all the magic of Christmas thanks to the smell of spices like cinnamon and nutmeg, not forgetting the traditional drop of brandy. We can buy these off the shelf in Hong Kong. They are individual portions or mini-tarts so it is easy to choose how many you need. Do buy two per person, as they are quite small and they keep easily for a few days if you find you have one or two left over. The pies are made of dried fruits, all marinated in a brandy sauce and served either with freshly whipped cream of a ball of vanilla ice cream!  Me, I am going to buying mine on 26th Dec from a bakery on Lamma Island who make the best minced pies in Hong Kong. I look forward to tasting my yearly mince pie soon. It is one of my personal favorite treats at Christmas time. For those of you who are interested or know what Cockney Rhyming Slang is, “Mince Pies” means “Eyes” so feast your “mince pies” on the next recipe!! 

 
  3. Gingerbread

Thanks to Shrek, I am a big fan of the Gingerbread Man,Gingy! His funny voice is simply unforgettable and hilarious. Next to Pussycatboot, Gingy is my second favorite Shrek character. Besides, if I want to describe the smell of Christmas, I will instantly think of gingerbread baking in the oven! According to historians, the first gingerbread was baked during the reign of Queen Elizabeth 1, who impressed important visitors with charming gingerbread portraits.

Gingerbread is fun to eat and not totally unhealthy thanks to the ginger!! I like to look at mine and think” You can't run! That's my plan! I'm going to eat you Gingerbread Man! And I ate the Gingerbread Man!” 

4.  Apple & Cinnamon pastries

These will also fill your room with deliciously delightful Christmas aromas. I made the apple cinnamon mixture at home one evening and brought it to the office as a Christmas treat for my co-workers recently which all enjoyed. Here is a very quick and easy recipe for you to try

Puff pastry shells (see the picture) 

2 medium size apples, peeled and sliced  

1 cup of apple juice  

3/8 teaspoon ground cinnamon  

2 tablespoons honey

1 teaspoon cornstarch or flour

  • Bake pastry shells according to package directions.
  • In a saucepan, combine the apples, 2/3 of the cup of apple juice and cinnamon. Bring to a boil. Reduce heat; simmer until apples are tender. Stir in honey. Combine cornstarch and remaining juice until smooth. Stir into apples. Bring to the boil; cook and stir for 2 minutes or until thickened. Last step, just spoon the apple mixture into pastry shells. DONE!

5. Chinese Egg tarts

Another ingredient that made me think of Christmas is…egg custard! When I was in the states one Christmas, I discovered Eggnog Latte at Starbucks which is simply delicious. The taste of eggnog reminds me one of our famous Hong Kong desserts. Hong Kong’s style egg tarts. Hong Kong’s egg tarts are definitely a very colonial style food. These egg tarts are an adaptation of British tarts. They are often served in Hong Kong at tea time or at 3:15pm when most office workers stop for coffee break in Hong Kong. People will take time out to relax and enjoy a sweet hot egg custard puff pastry with silk stocking milk tea.

For Christmas, I like to serve my egg tarts with a Mocha Baileys. It is truly one of the most divine combinations and nicest ways to treat special guests during the festive season.  

Mocha Baileys

One cup of chocolate milk

coffee (depends how much you want)

one shot of baileys

whipped cream or chocolate powder on top

Again, there are so many delightful recipes to choose from during this festive time it would be impossible to mention even a third of them, but truly hope that the ones I’ve noted here are helpful in making this time of the year that bit more special.

Quick and Easy So WTF American food Recipes

It is always fun to travel in the states. When I was in California, I fell in love with fusion cuisine. It was nice to try things like sushi roll with kiwi, and other delicious innovative east meets west combinations. When in the Southern States, I take advantage of the Soul food, dishes such as grits and  chicken and waffles. Thanks for Tarantino too, diners are a must and are systematically on my favorite list of places to eat while in the states. I love the atmosphere found in diners and they remind me of some of my favorite scenes in his movies.  

However, there’s no doubt about it; I always gain happy pounds after my trips to the states. Especially after my recent trip to New York, my waistline has obviously expanded significantly. Why so, you may wonder? I have to confess that I am a confirmed addict of New York’s pizzas, and I find it really hard to resist tucking into one or two slices of its foldable thin crust, relish in the cheese and seasoned oil dripping on my wrist during the day, “far too tempting” for you average city girl!  And then there’s the hot dog stands, they’re everywhere and also irresistible.  The smell seems to beckon “eat me”, not to mention the price. Mmmm, I know, I am definitely a street food girl.  

Though I am not a big fan of burgers, probably because I don’t eat beef that much, I usually opt for Taco bells instead of Whoppers. However, I had the nice surprise to taste a really good Veggie Burger in a New York restaurant, which got me thinking about cooking and my kitchen, which I must have been missing. Anyways, it got me thinking about cooking up some healthy home recipe burger and to try my hand at using some of the ideas I had picked up on my travels. 

It is odd how inspiration sometimes hits unexpectedly. While I was thinking of cooking American food, I wondered;

“What about to making some low fat food?” which led to another thought

 “What about to being a little more experimental and use local Chinese ingredients”

Yes…I laughed out loud at the idea and with it and I decided:

“Why not go totally wild and make some so called “WTF American fusion food?”  

So, here we go! But before sharing these crazy recipes with you, I have no intention to offend or turn anyone off their food…though I’m already expecting some not so favorable posts afterwards. Anyway, check out my WTF recipes, I had so much fun cooking them and writing about these fun recipes for friends on Soperspective. Try them if you like or simply treat them as a joke! 

Recipes for WTF Pizza

As I said before, I am a true devotee of New York pizza; I just love the thin and crispy crust of this delightfully rather oversize pizza. What’s more, I love its “foldability”, not forgetting to mention the oil and cheese dripping from pizza. It is a real pleasure to look at the golden baked cheese, the zesty tomato sauce and the oil sparkling over the pepperoni. A true delight for both eyes and taste buds, (whatever the consequences on your waistline). Anyway, New York’s Pizzas are one of my favorite in the world. I could eat it everyday!

So, here comes my WTF pizza recipe. I don’t have the necessary skill to make New York Pizza but I will dare to combine it with Chinese local foods. Everyone loves the sweet and sour taste. Whether you are Chinese or a Westerner, sweet and sour is goes well with cheese and tomatoes. So, if you are running out of tomato paste, sweet and sour sauce would be the substitute or alternative for your pizza’s topping. (I know what you are thinking…you want throw me in with the tomatoes, right?)

Ingredients:

Sweet and Sour Fish/Pork/chicken Pizza

Sweet and Sour sauce (You can use the ready sauce, Lee Kam Kee )

Fish or boneless pork , chicken (Cut it into 1 inches cube and marinate in the soy sauce and cornstarch for 20 minutes)

½  Green or

½ Red/yellow Bell peppers

½ cup Pineapples chunks

Grated Parmesan cheese

Pizza dough (I used flat bread Lavish multi grain)

Batter:

1/3 cup flour

1/3 cup cornstarch

1 egg white, lightly beaten

1 tablespoon vegetable oil  

1/3 cup warm water, as needed

Preparation:

If you can buy the already cooked sweet and sour pork, you can skip the preparation below. Just put the sweet and sour sauce on top of the pizza dough and put it into the oven. Don’t forget to top it all off with your favorite cheese.  
 
Heat the oil for deep fry. 
 
For the batter, combine the flour and cornstarch. Stir in the egg white and vegetable oil. Put it in the Fridge for 30 minutes or so to settle. Dip the marinated pork cubes in the batter. Deep-fry the pork until it is golden brown. Remove and drain on paper towels.

Then, mixed with the sweet and sauce and add the peppers, pineapple to a stir]fry. In order to make a thick texture, stir with cornstarch. Put salt and vinegar to taste. DONE!

Lobster sauce with e-noodles Pizza (E mein)

Where on earth does my inspiration come from, I hear you ask?

I was thinking about Chinese foods that go with cheese. My co-worker suggested this dish to me. Yes, everyone in Hong Kong knows this dish, as it is a very popular and is served at banquets and is on the menu of most Chinese restaurants. The Chinese don’t eat cheese that much, but when it comes to lobster with e-noodles, we do add cheese in it. So, as I am a budget cook, no fresh lobster in this recipe and. I’ll use lobster soup with instead 

 

The ingredients  

One can of lobster soup

e mein (or Eggnoodles)

cheese

few basil leaves (optional)

The preparation is so simple. Boil the noodles; mix with the lobster soup and cheese and simply spread on the pizza dough. Put it into the oven. Add some basil leaves if you like it. Feel free to put your favorite ingredients on this pizza, real lobster, crab meat or onion and tomatoes.   

The picture doesn’t look to appetizing as I have a very small oven in the office. If you are bored with eating pasta or noodles in soup, Noodles Pizza is a good alternative.  


Hot dog:

Hotdog stands are one of the signature scenes of New York. When you see bankers talking on the cell phones and taking just a two minute break to grab a quick bite, Hotdog stands seem to make so much sense and offer them a very efficient solution. As Hong Kong is renowned for street food too, I like to eat in the street and hotdog stands make me nostalgic for my hometown. Watch out for your sleeves when you are eating hotdogs, my favorite white coat’s sleeves received a slightly unwanted modern art re-touch with Ketchup and mustard sauce. ..Anyway, who cares, it was yummy and the dry cleaners did a great job!! 

So’s WTF hotdog recipe, hotnoodles dog.  

I need to clarify something here and can’t take the acclaim for this recipe. In fact, this recipe has existed for many years. It originated in Japan and is now very popular in Taiwan as well. I was in love with this food at the age of six.  As a very popular Japanese cartoon called “娛樂金魚眼” mentioned this wonderful food in every episode The characters in the cartoon treat the noodles hotdog like “the divine and holiest food”. It was so funny to try it out and my mom did it upon my request. OK, I haven’t tried this food for many years; the hotdogs in New York really stirred up my old memories of these tasty goodies. Here are the simple ingredients  

hotdog bun

Fried noodles

lettuce and tomatoes

Ketchup or Mayo ,or any sauce you like

Feel free to be creative, you can put cheese and meat etc

Put all the things together: Done. Easy right?

Burgers

Here is yet another popular American food, Burgers. Hong Kong is one of the cheapest places in the world of selling the Big Mac (US$1.71). I do visit Mc Donald’s quite often, not for burgers, but because of the garden salad

However, since having tasted this magical veggie burger (see above) in New York, I have changed my mind with regards to burgers. So…I have come up with a very luxury but in fact a very cheap burger… so, I have great pleasure to introduce probably the most WTF burger in the world! 

Abalone and Shark’s Fin Burger. 

WTF, right?  

Okay, but it tastes good. I can’t afford to eat the real abalone and shark’s fin, so here is the perfect solution to bring us tastefully through the economic crisis.  

Vegetarian Abalone and Shark’s fin. What could it be? I don’t know but it is very easy to get them in Hong Kong’s supermarkets. (Please see the picture) It is cheap, one packet of vegetarian abalone cost 4 USD and shark’s fin is around USD 3 It is definitely cheaper to buy beef steak and to do our bit for saving the earth as well.  

OK, to highlight the taste, Teriyaki sauce is the essence of the recipe. The vegetarian  abalone goes with Teriyaki sauce very well.  

Ingredient: 

Burger buns

one vegetarian abalone, (slice)

Vegetarian  shark’s fin (One handful is a good amount)

Tomatoes and sprouts

Preparation:   

Slice the vegetarian abalone and put it on the frying pan. Put the teriyaki sauce on it, salt and pepper to taste! Easy, right? Stir in the vegetarian sharkfin to the sauce and turn off the heat.  Don’t overcook the shark’s fin.

   

Where does this WTF idea come from? In Hong Kong, the stock market was blooming during 70s, the bankers wanted to order something very luxurious for lunch. So a chef invented a dish using Shark’s fin mixed with rice. Since then, it has become a common to poke fun at the super rich people to say they eat “Shark’s fin with rice” for normal meals. This means they have lots of money to spend.  

Hope you’ve enjoyed reading So’s WTF recipes. I can’t honestly say that the above recipes are that healthy as they are high in carbohydrates and very low in fiber. It is very unauthentic and probably your grandma will be very upset and say “WTF?”  

Anyway, cooking is a creative endeavor and in the end confirm that even though it isn’t 100% healthy or good for our waistlines I really enjoy the saucy and juicy WTF American food.

So's Top Five Music Movies

“When I used to see a musical, I would always leave the cinema before the last song, so that it could last forever” Bjork 

Movies are often referred to as the “seventh art”, which isn’t too surprising when we consider the wonderful diversity of combinations & different elements included in their making. I especially think that this is true for musicals. I enjoy and love them for the way they marry so perfectly visual and audio. Good musical scores along with dramatic stories leave a more lasting impression on me. Below, I’ve listed my top 5 music movies (up to now) of all times with their video clips. I am by no means a film “critic” so my reasons for choosing them are because they are simply unforgettable and I’ll never get tired of seeing them over and over again.  OK! Let’s roll!!!  

The Red Violin

I have a special preference for movies with scenarios which stories seem at first unrelated but somehow intertwined. If you have seen Babel, the hours, you should know what I mean. The red violin offers a wonderful trip through three centuries and across several countries. From the 16th century Cremona in Italy, to the present day in an auction house in Montreal. There are 5 key episodes, each one representing a moment of a Red Violins’ history. This was mysteriously haunted by the soul of the maker’s deceased wife. As I mentioned, the five stories are totally unrelated but the tragedy brought on by the red violin in each episode have a common thread. In any case, and regardless of the ins and outs of the film itself, the red violin is a great motion picture. It is a perfect mixture of the visual and the audio. The diversity of historical backgrounds is truly fascinating. This combined with music by John Corigliano makes it superb. Listen out for the moving, lyrical and innovative violin music.

     

Amadeus:

Everyone knows who Mozart is. The Oscar winning movie “Amadeus” was released before I was born. Therefore, some people of my age may have never seen which in my book, is a masterpiece!” This movie is more than a narrative biography of Mozart and is based on the “Vengeance” of a mediocre composer Salieri. Because of jealousy, Salieri was obsessed with defeating Mozart and even contributed to his death. It is a very dark and revengeful movie, indeed.

Besides the dramatic plot, Amadeus has to be considered as one of the best music movies of our age. We all recognize and wonder about the magical power of this legendary genius and you will certainly find yourselves rediscovering melodies you haven’t possibly heard for a while during the movie.  

Look at the trailer below, you will see that this is a very “colorful” and vivid movie. Unlike other movies that come across as possibly a little tedious or intense and dealing with “serious” arts all the time, Amadeus is definitely brilliantly filmed and the screenwriter shows and introduces a marvelous selection of contrasting scenes to contrast the characters of Mozart and Salieri. No wonder, Amadeus won the eight Oscars, including the best picture. You won’t feel bored when you watch this classic, in fact, it is timeless.   

 

Dancer in the Dark: 

This is heart wrenching musical movie. The Icelandic pop diva Bjork plays a Czech immigrant, Selma in 60’s America . She is going blind and desperately saving for an operation to save her son’s sight who has unfortunately inherited the same infliction. As you can gather, the movie is most definitely dramatic, and deals with betrayal, death & despair but I don’t want to reveal too much here. I prefer to focus more on the musical scenes in the movie. You won’t hear many conventional music instruments, such as piano or violin, drum, but instead, the music seems to find more in common with noises and rhythms from factories. A scratching pencil, the stomping sound of a factory machine and the train clattering over tracks, any rhythm from the real world becomes Selma’s music inspiration. The director used a very unsteady hand-held camera in the non-musical scenes. I remember feeling very dizzy at the very beginning. Once the music starts, all the scenes start to flow, I feel that the music represents a retreat or interlude from Selma’s miserable life. Definitely, without the music, the film would be unwatchable. But the director succeeded in stirring audience’s attention by using an unconventional approach. This is one of the most emotionally compelling movies and a very innovative cinematic experience.

 

The Legend of 1900:

According to Taiwanese translation, the movie is called “The pianist in the sea”. This is the most direct translation of what the whole story is about. However, don’t perceive this is a boring and simple movie. In fact, this is the movie when I talk to my pianist friends, they always say, “Oops!I have to see this movie again. It is so good!” Indeed, this is a powerful and a little bit complicated movie in some respects. Who is 1900? 1900 was the abandoned baby on a ship and who an engine room worker adopts and names 1900. 1900 becomes a piano virtuoso and the audience exclaim to their surprise «That’s never been heard before”. All throughout the movie, his piano music engages and compels you to listen and let yourself be taken in. 1900 plays all styles of music, so even if you just like humming along with the melodies or like Jazz music (the movie has some very surprising jazz music in the clips I will show you below) as well as many other wonderful tunes. It isn’t only the music, if you watch the second video clip, you will find the cinematography is truly brilliant, in particular the multi hands duel! The legend of 1900 is worth watching from time to time. You may not agree with his life philosophy, his infinite life played over 88 keys. The land is a rat race with infinite choices and perils” But overall, you will be fascinated by the enchanting piano music.

Moulin Rouge:

It is spectacular. The Moulin Rouge sound track is among my all-time favorite albums and is set on my iPod. The songs in the movie electrify my ears and senses. The whole movie revives our favorite tunes in a daring and imaginative way. There’s “Lady Marmalade” transformed to a pop version, Material Girl by Madonna, "Diamonds Are a Girl's Best Friend” sung by the scintillating Satine (starring Nicole Kidman). It has the most stunning and impressive scenes and sets I’ve ever seen. Moulin Rouge is definitely a musical spectacle! It is an amazing retouched version of modern pop tunes! You can hear very modern, funky techno tunes in the setting of The Infamous Moulin Rouge in Paris. From the opening till the final scene, Moulin Rouge never fails to invade your eyes with its glamorous and dazzling film setting. Though the movie is about the forbidden love between a poor poet with a glamorous beauty, Moulin Rouge is still very bright and entertaining movie that will leave you stunned by the vivid, lively, dazzling eruption of sights and sounds! Moulin Rouge is a spectacle of great music and visual pleasure. Watch the clips below and you will know what I mean!
